African Peanut Stew

1 medium onion, finely chopped

4 cloves garlic, minced

2 T ginger, minced

2 T oil

1 bunch kale, shredded.

6 cups vegetable broth

14 oz crushed tomatoes

1 heaping Cup natural peanut butter

Salt to taste

Sriracha sauce for garnish

In oil, saute onions until lightly carmelized. Add garlic and ginger and saute for 1-2 minutes longer. Toss in Kale and saute 1-2 minutes more. Deglaze with vegetable broth. Add tomatoes and simmer for 20 minutes. Stir in peanut butter. Simmer for another 10-20 minutes.

Serve over mong dal, mashed potatoes or your favorite grain. Garish with sriracha to taste
