Carrot Spice Salad

This hearty salad is so dense that it can serve as a meal. It is higher in carbohydrates so it is a very good dish when recovering from a heavy workout or depleting illness.

1 lb. shredded carrot

2 tsp. coriander

2 t cumin

2 tsp. curry

1 tsp. turmeric

1 tsp. cinnamon

1-cup raisins

¼ cup safflower oil

4 tsp. finely chopped fresh cilantro

Toss ingredients together.
