Vegan Caprese Salad

Avocado is so creamy and tasty; you won’t miss the fresh mozzarella that is in the traditional recipe. Then again, substitute mozzarella and you have another salad recipe.

6 vine ripened roma tomatoes

Handful of fresh basil chopped

1 ripe avocado cubed

¼ cup balsamic vinegar

¼ cup olive oil

Sea Salt and fresh cracked pepper to taste

Toss together and enjoy immediately
