Un-Pumpkin Pie

It tastes like pumkin pie. It smells like pumkin pie, but it looks like a roasted pumkin and it doesn't contain anything artificial or hydrogenated and there are no added sweetners (unless you want it to). Try this fun revision of the American staple. Your family or guests will delight it it's uniquness and taste.

1 small sugar pumpkin

4 apples diced

1 cup raisins

1 cup finely chopped walnuts

1 Tablespoon molasses (optional)

1/2 teaspoon ground nutmeg

1/2 teaspoon ground cinnamon

1/4 teaspoon ground ginger

1/4 teaspoon salt

2 tablespoon butter

Heavy cream, almond milk or coconut milk

Preheat the oven to 350 degrees F.

Cut the lid off the pumpkin and remove the seeds.

Combine the apples, raisins, walnuts, molasses, nutmeg, cinnamon, ginger and salt. spoon mixture into the pumpkin shell and top with butter. Replace lid on pumpkin and place in a baking pan.

  1. Bake at 350 degrees F (175 degrees C) for 1 to 1-1/2 hours or until mixture is tender. Serve right from the pumpkin at the table, slicing like a pie, spooning sweet mixture over top of pumpkin slice and topping with your choice of "cream."
