Beet Root salad (UP style)

2 beets

1 tsp turmeric

1/2 tsp mustard seeds

sprinkle sugar or succanat

salt

Slice, and then boil in turmeric water for 10 minutes. Make sure the water covers all the beets. Drain, and saute in oil with mustard seeds. Sprinkle, sugar, salt and glaze over medium heat.
