Cucumber Mint Raita

A great digestive aid. Spices can vary.
1 large cucumber
¼ tsp salt
¼ tsp pepper
1 cup organic whole milk yogurt
¼ tsp coriander, fennel, or cumin powder (optional)
Mint sprigs for garnish (optional)
Peel the cucumber with a vegetable peeler, leaving a few strips of skin for color. Cut in half lengthwise. Scrape out and discard the seeds. Grate the cucumber halves with a large box grater. In a medium-sized bowl, mix the grated cucumber, ground spices if using, salt, and pepper into the yogurt until well blended. Garinish with sprigs of mint on top, if you like.
Great served with vegetables and grains.
